Beet Juice History
The 1st historic record of the beet is found among the ancient Romans who were the first to use it as food. Beets then found their way into northern Europe, however these early Europeans used the beet for animal feed before it appears as human food in the 1500s.
The Polish were the first to produce sugar from beets in the 1800’s. During this time the beet made its way to the Americas where, as in the Roman culture, it was not only consumed as food but also used medicinally to cure fever, heal wounds, and relieve constipation.
Beetroot is a variety of the plant Beta vulgaris which is a member of the Chenopodiaceae family. It is also called other names like garden beet, table beet or red beet. Its roots are usually deep-red in color but can come in a number of different shades. The plant grows around 1 to 2 meters tall. It has large, heart-shaped leaves and very small green or red-tinged flowers.
It is known that beetroot evolved from the wild seabeet which originated from the coastlines from India to Britain. In Ancient Greece, beetroot was used as an offering to the god Apollo in his temple at Delphi. It has been revered for its many medicinal effects and it has been used for the treatment of fever, constipation, skin problems and many more. The root of the beetroot then was thin and elongated, similar to a carrot. The round shape of the beetroot we know today was developed during the 16th century. During the 18th century, it became popular in Central and Eastern Europe as an ingredient in many dishes. This popularity only grew during the Victorian times as it was used for salads, soups, cakes and puddings.
Today, the beetroot is still used in many recipes in the kitchen and it still valued for its ability to prevent and eradicate diseases. Although it is not recognized as a drug, it is still being sold as a health supplement. It has been the focus of many scientific studies as it is still unclear how it heals or if it does have healing properties.

The purpose of the present study was to investigate whether BJS can also improve performance in swimmers. Results show that workload at anaerobic threshold was significantly increased by BJS.
